The oil in brown rice is mainly concentrated in the aleurone layer of the embryo and rice bran layer, especially in the embryo.

Rice bran oil contains about 38% linoleic acid and about 42% oleic acid, with a ratio of about 1:1.1 between linoleic acid and oleic acid. From the perspective of modern nutrition, this ratio of oil has high nutritional value.

Therefore, rice bran oil is still a high-quality frying oil for large-scale production of flavored potato chips, fried snack foods, and stirred fried foods.

(2) When margarine rice bran oil is used in margarine, it can form a stable crystal lattice, and has plasticity, emulsification, and extensibility. This low hydrogenated margarine product with rice bran oil has a low fatty acid content and can be mixed with other oils through transesterification. These characteristics make rice bran oil have significant advantages in the production of margarine.

(3) Rice bran oil, a coating product, contains a lot of natural antioxidants, which can be used in Dim sum, hard fruit and other foods to extend the shelf life of food. In addition, mixing rice bran oil with unstable oils can also improve the stability of coated foods.
