Oxidation resistance
1. Scavenging free radicals
Since the 1950s, the antioxidant activity of ellagic acid in vivo and in vitro has been continuously explored and studied, and more and more research results show that ellagic acid has strong free radical scavenging and antioxidant ability. Ellagic acid can scavenge both oxygen free radical and hydroxyl free radical, and its scavenge ability is higher than that of sesamol, olive leaf extract and lutein.
2, inhibit lipid peroxidation
Ellagic acid is considered to be the most effective inhibitor of the initiation of nadPH-dependent lipid peroxidation in microsomes, and strongly inhibits doxorubicin-induced lipid peroxidation. Ellagic acid inhibits myoglobin/hydrogen peroxide-dependent lipid peroxidation. Ellagic acid can prevent lipid peroxides (LPO) induced by exogenous substances, inhibit the production of reactive oxygen species (ROS), and improve cell death induced by cytotoxins in T cells.
3. Other antioxidant activities
Ellagic acid powder reduced cell damage caused by radiation, hydrogen peroxide and mitomycin C in mouse bone marrow cells. Ellagic acid effectively inhibited the oxidation of DCDHF induced by pernitrite and the oxidation of pernitrite itself. Ellagic acid inhibits interleukin 1B (IL-1) and tumor necrosis factor -α(TNF-α) -induced activator protein-1 and mitogen-activated protein kinase activity, thereby inhibiting the transformation of newborn pancreatic astrocytes into an activated fibroblast phenotype. Ellagic acid, as a secondary metabolite, plays an anti-eosinophilic role in β -glucan peritonitis model. Ellagic acid is a potent inhibitor of eosinophils and may be used to treat allergic inflammation. Ellagic acid can protect the liver from carbon tetrachloride induced liver poisoning in vivo and in vitro, and can also resist the lipid peroxidation induced by tert-butyl hydrogen peroxide.

Melanin is produced by tyrosine (T yr O S I N E), tyrosinase must be transformed into dopamine (DOPA), DOPAquinine (DOPAquinine), and finally form melanin. Ellagic acid blocks melanin production by inhibiting tyrosinase activity.
